Pumpkin Pie

4 eggs, beaten

1 C. milk

1 tsp. cinnamon

3 C. pumpkin

1 T. flour

½ tsp. nutmeg

2 tsp. vanilla

½ tsp. salt

1 C. sugar

1 C. honey

2 unbaked pie shells

Preheat oven to 425º. Mix ingredients in the order given. Pour into pie shells. Bake at 425º for 1 minutes. Reduce oven temperature to 350º and bake 40 to 50 minutes, until pie is golden and well set.

Tip: For a more traditional, custard-style pie, add two more eggs. Serve with whipped cream.
