Easy Green Chili Rice

4 C. cooked rice

2 (4 oz.) cans green chilies

1 ½ C. shredded Colby Jack cheese

12 oz. sour cream

Combine all ingredients and place in a 2 quart baking dish. Bake at 350º for 30 minutes.

Green Chili Rice

1 (10.75 oz.) can condensed cream of chicken soup

1 C. (8 oz.) sour cream

1 (4 oz.) can green chilies

1 C. (4 oz.) shredded cheddar cheese

1 ½ C uncooked instant minute rice (she says this works the best, but doesn’t use it for anything else, I don’t either)

In a large bowl, combine the soup, sour cream, chilies and cheese. Stir in rice. Transfer to a greased 1 ½ quart baking dish. Bake, uncovered, at 350º for 20 minutes or until rice is tender.

Emeril’s Rice

3 T. oil

2 C. rice, uncooked

2 (14 oz.) cans chicken broth

1 T. Emeril’s Seasoning (posted below)

  • Heat oil in a pan.
  • Add rice and stir rice in hot oil for 1-2 minutes or until rice starts to turn whiter in color. You are basically frying the rice like you do in Mexican rice.
  • Add chicken broth and seasoning.
  • Stir and bring to a boil.
  • Cover and cook on low for 18-20 minutes or until rice is tender.

Emeril’s Baby Bam Seasoning

3 T. paprika

2 T. salt

2 T. dried parsley

2 tsp. onion powder

2 tsp. garlic powder

1 tsp. ground black pepper

1 tsp. dried oregano

1 tsp. dried basil

1 tsp. dried thyme

½ tsp. celery salt

Mix all ingredients together and store in an airtight container.

Note: If you want it more spicy just add a little chili powder. This can be use on anything you cook.

Homemade Pizza Sauce

1 (28 oz.) can tomato puree

1 ¾ C. water (1 ½ C. is better)

1 T. dried parsley

2 tsp. dried basil

1 tsp. dried oregano

½ tsp. dried thyme

¼ tsp. black pepper

¼ C. olive oil

2 T. garlic powder

¼ C. red wine vinegar

1 to 1 ½ tsp. salt

Whisk all together starting with only 1 tsp. salt. Taste and add more salt if needed. Store in the refrigerator for 1 week or freeze.

Emeril’s Basic Red Sauce

2 T. olive oil

1 ½ C. chopped yellow onion

1 tsp. minced garlic

½ tsp. salt

½ tsp. dried basil

½ tsp. dried oregano

1/8 tsp. ground black pepper

2 (28 oz.) cans diced tomatoes

2 (15 oz.) cans tomato sauce

3 T. tomato paste

2 C. water

1 tsp. sugar

  • Heat the olive oil in a large, heavy pot over medium heat.
  • Add the onions, garlic, salt, basil, oregano and pepper and cook, stirring until soft, about 5 minutes.
  • Add the tomatoes, tomato sauce, tomato paste, water and sugar to the pot with the onion and stir will.
  • Bring to a simmer over medium-high heat.
  • Lower the heat to medium-low and simmer, uncovered for 45 minutes, stirring occasionally with a long-handled wooden spoon.
  • Remove the pot from the heat and use the sauce as needed. You can store this sauce in an airtight container in the refrigerator for up to 4 days, or freeze it for up to 3 months.

Homemade Enchilada Sauce

2 (8 oz.) cans tomato sauce

1 (4 oz.) can chopped green chilies, undrained

½ C. onion, chopped

2 tsp. chili powder

1 tsp. ground cumin

¼ tsp. dried oregano

1 clove garlic, minced

Combine all tomato sauce ingredients and place in a blender. Puree ingredients. Then place in a saucepan. Heat over medium heat until heated through, about 5 minutes. Use as desired for enchiladas.

Southern Style Cornbread with Bacon

6 slices bacon, chopped fine

2 ¼ C. cornmeal

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

2 C. buttermilk

¼ C. vegetable oil

2 lg. eggs

  • Cook bacon in oven proof skillet over medium heat until crisp, about 6-7 minutes. Transfer bacon to paper towel-lined plate. Pour off fat from pan, reserving a few T. in pan for baking the cornbread.
  • Combine cornmeal, baking powder, baking soda and salt in large bowl. Whisk in buttermilk, ¼ C. oil, eggs and crisp bacon.
  • Heat reserved bacon grease in empty skillet over medium-high heat until hot (I just put mine in the hot oven until I’m ready to pour in cornbread mixture, just don’t leave too long or your grease will burn.). You want a hot pan and hot grease. Spoon cornmeal mixture, about ½ C. at a time, into skillet and bake at 450º until top begins to crack and sides are golden brown, about 13 to 16 minutes. Cool in pan 5 minutes, then turn out onto wire rack.

Note: You could use any cornbread recipe that you like and add the cornbread to it. My favorite recipe is the Country Cornbread.

A Very Different Mac and Cheese

3 slices, thick sliced smoked bacon

4 T. butter, plus 2 T., plus 1 T.

4 T. flour

2 C. half & half (or 1 ½ C. milk)

¾ C. sea salt

¼ tsp. ground white pepper

½ tsp. adobo sauce from canned chipotle chiles (*optional)

½ tsp. ancho chile powder (*optional)

2 C. grated Parmigiano-Reggiano

1 lb. elbow macaroni

¾ tsp. minced garlic

4 oz. grated extra sharp cheddar cheese

4 oz. grated fontina cheese

4 oz. grated gruyere cheese

¼ C. fresh sourdough bread crumbs

  • Place bacon on baking rack in 400º ovenbake for 15+ minutes or until bacon is crisp. Remove from oven and place on paper towels to remove excess grease. After it cools crumble it into bits and set aside. Adjust oven temp down to 350º.
  • In a saucepan slowly melt 4 T. butter over low heat. Add flour and stir with butter to combine. Cook, stirring constantly, for 3 minutes. Increase the heat to medium and whisk in the half & half a little at a time. Cook, until just thickened, about 4 to 5 minutes, stirring frequently. Don’t cook too long or it will get gluey. Remove from the heat, season with the salt, pepper, adobo and about half of the grated Parmesan. Stir until cheese is melted and sauce is smooth. Cover and set aside.
  • Fill a large pot with water and bring to a boil over high heat. Add salt to taste and, while stirring, add the macaroni. Return to a boil, reduce the heat to a low boil and cook for about 5 minutes, or until macaroni is al dente (slightly undercooked). Drain in a colander and return the macaroni to the pot. Add 2 T. butter and the garlic and stir to combine. Add the cheese sauce and bacon bits and stir until well combined. Set aside.
  • Using the remaining tablespoon of butter, grease a 3 quart baking dish or casserole and set aside. In a large bowl combine about 4 oz. of the remaining parmesan cheese (you should still have some parmesan left for the topping), cheddar, fontina and gruyere cheeses. Toss to combine.
  • Layering macaroni: Place 1/3 of macaroni in the bottom of the prepared baking dish. Top with 1/3 of the mixed cheeses then add another 1/3 of the macaroni and another 1/3 of the cheese mixture to create layers that will melt well. Repeat with the remaining macaroni and cheese mixture. In a food processor, blend sourdough bread to create crumbs. In a small bowl combine the sourdough bread crumbs and remaining parmesan and ancho powder. Sprinkle over the top of the macaroni and cheese. (You may also add sliced heirloom tomatoes to top of macaroni before adding bread crumbs and parmesan. Bake for 40 to 45 minutes, or until the macaroni and cheese is bubbly and hot and the top is lightly golden brown. Remove from the oven and allow to sit for 5 minutes before serving.

Tangy Roasted Tomatillo Chili Sauce:

1 lb. tomatillos, husked

1 white onion, peeled and quartered

6 garlic cloves

2 jalapeños

2 tsp. freshly ground cumin

1 tsp. salt

¾ C. chopped cilantro leaves

1 lime sliced

On a baking tray, roast tomatillos, onion, garlic and jalapeños for 12 to 15 minutes. Transfer the roasted vegetables and any juices on the bottom of the tray to a food processor. Add the cumin, saslt, cilantro and lime juice and pulse mixture until well combine but still chunky.

Chicken Enchiladas

Extra virgin olive oil

½ med. Onion, diced

5 garlic cloves, chopped

1 ½ tsp. ground cumin

¼ C. flour

2 C. chicken stock (not low sodium)

Chopped cilantro leaves (lots)

1 deli roasted chicken (about 3 lbs.), boned, meat shredded

Salt

Freshly ground black pepper

10 lg. (but not burrito size) flour tortillas

¾ lb. Monterey Jack cheese, shredded

2 C. sour cream

Chopped tomatoes and cilantro leaves, for garnish

  • Preheat oven to 400º
  • Meanwhile heat a 2 count of olive oil in a medium saucepan over medium heat. Add the onion and cook until soft and caramelized – this should take 5 to 7 minutes. Add the garlic and cumin then cook for further minute. Sprinkle on the flour and stir to ensure the flour doesn’t burn then gradually add the chicken stock to make a veloute (I looked it up, it’s a white sauce). Continue stirring over a low simmer until the flour cooks and the liquid thickens. Turn off the heat, add half of the roasted tomatillo chile salsa, some additional fresh chopped cilantro and fold in the shredded chicken meat. Season to taste, with salt and pepper.
  • Change the temperature of the oven to 350º and begin assembling the dish. Take a large baking dish and smear the bottom with some of the reserved tomatillo salsa (see recipe above).
  • Now take the flour tortillas and briefly flash them over the stove top flame (of put them briefly under the broiler if using an electric stove). Using a shallow bowl, coat each tortilla lighly with the reserved salsa mix. Put a scoop of the shredded chicken-enchilada mix on top of the tortilla followed by a sprinkle of the shredded cheese. Fold the tortilla over the filling and roll like a cigar to enclose it. Using a spatula place the tortillas in the baking dish and continue to do the same with all the tortillas. Finally pour over some more of the salsa and top with the remaining shredded cheese. Bake uncovered for about 30 minutes until bubbly and cracked on top. Garnish, cilantro and tomato.

Mexican Pizza

1 can refried beans, heated (makes them easier to spread)

½ lb. of ground beef, cooked and seasoned with taco seasoning

Shredded cheese, either cheddar or Colby jack

1 jar taco sauce

Chopped tomatoes

Sliced olives (optional)

Tostada shells

Place tostada shells on a cookie sheet or pan. Spread beans on top of each shell. 1 can of beans makes 6 of these pizzas.

Spread a layer of meat on top of beans and then sprinkle a small amount of cheese on top of meat. Place another shell on top of that. Spread taco sauce on that shell. Then place olives and tomatoes and top off with taco seasoning. Then place more cheese on top of that. Bake at 400º for about 8 minutes or until heated through.

Quick Corn and Ham Pudding

1 ½ C. lowfat milk

¼ C. flour

5 lg. eggs, beaten

2 C. frozen corn kernels, thawed

4 oz. lean deli ham, finely diced

4 oz. reduced fat Swiss cheese, finely diced

¼ C. grated Parmesan cheese

Preheat oven to 375º. Lightly oil or coat a 7x11” baking pan with nonstick cooking spray.

Whisk together the milk and flour in a large bowl until well combined. Add the eggs, corn, ham, Swiss cheese and Parmesan cheese and whisk to combine.

Pour the mixture into the prepared pan and bake, uncovered, until golden brown, about 40 minutes.

Nest Eggs

2 slices whole wheat bread

1 tsp. canola oil

2 lg. eggs

2 tsp. pure maple sugar

Use a cookie cutter or the top of a small drinking glass to cut a 2 ½” round hole in the middle of each slice of bread. Toast the removed “hole”.

Heat the oil in a nonstick skillet over medium heat. Place the bread slices into the skillet. Crack the eggs open and drop into the holes; break the yolks. Cover the top of the skillet with a saucepan lid and cook until the eggs set, 4 to 5 minutes. Flip the bread and cook an additional 30 seconds to 1 minute.

Top with a drizzle of maple syrup and serve with the toasted, buttered “hole”.

Homemade Taco Sauce

8 oz. tomato sauce

¼ C. water

¼ tsp. chili powder

1 tsp. cumin

1 T. of onion, chopped

1 T. white vinegar

½ tsp. garlic powder

¼ tsp. salt

¼ tsp. paprika

¼ tsp. sugar

¼ tsp. ground red pepper

Mix all together in a blender until smooth. Pour sauce into pan and cover over med-low heat for 15-20 minutes. Don’t skip the cooking part of this. You need to heat the sauce up to really blend the flavors together.

Hot Chocolate Mix

1 lb. Nestles Quick

1 (8 oz.) jar Coffee Mate

1 (8 qt.) box Carnation Dry Milk

1 lb. box powdered sugar

Mix well – Use 1/3 C. mix to 1 C. boiling water.

Baked Grits

3 C. cooked grits (6 servings)

1 C. Velveeta cheese

1 stick oleo

1 egg

½ C. milk

Bake at 350º until golden brown.

Quiche Lorraine

Brown:

  • ½ lb. bacon & crumble
  • Place in 9” pie shell with 1 C. shredded Swiss cheese + 1/3 C. onion
  • Beat 4 eggs slightly.

Add:

  • 2 C. whipping cream
  • ¾ tsp. salt
  • ¼ tsp. sugar
  • 1/8 tsp. pepper
  • Beat together:
  • Pour into (deep dish) shell

Bake at 425º for 15 minutes. Reduce heat to 300º, bake 30 minutes until knife inserted comes out clean. Let stand 10 minutes before serving.

Mayonnaise

2 eggs

1 ½ C. oil

½ tsp. salt

1/8 tsp. white pepper

2 T. vinegar or lemon juice

½ tsp. dry mustard

In a blender, put eggs, ½ C. oil, salt, pepper, vinegar and mustard, cover and turn motor to medium speed. While blender is on, add the remaining oil in a steady stream.

Hot Buttered Rum

1 lb. butter

1 lb. brown sugar

1 lb. powdered sugar

1 qt. vanilla ice cream

2 tsp. cinnamon

½ tsp. nutmeg

2 T. vanilla

1 T. molasses

Pinch of allspice

Cream butter with sugars, add spices, blend in softened ice cream.

Spanish Rice

1 C. rice

1 can tomato juice or canned tomatoes w/ enough water to cook rice + ½ C.

½ C. onion

½ c. bell pepper

¼ C. oil

  • Brown rice in oil.
  • Add onions & bell pepper – brown
  • Add water and tomatoes, salt, pepper to taste, ½ tsp. cumin, 1 ½ tsp. garlic. Simmer

Pickled Okra

3 C. white vinegar

2 C. water

1/3 C. salt

2 lbs. okra

Boil and pack okra in jars. Add 1 pepper to each jar. Yield: 4 pints

Hot Three Bean Casserole

Fry until crisp 8 slices of bacon; drain & crumble after cool. Save grease. To grease add 2 medium onions sliced or chopped; ¾ C. brown sugar; 2 T. apple cider vinegar; 1 tsp. dry mustard. Mix well bring to boil & simmer for 12 – 15 minutes.

Drain:

1 (16 oz.) can kidney beans

1 (16 oz.) can baby lima beans

1 (16 oz.) can pork & beans

Mix beans with sauce and I add little salt & pepper.

Pour bean mixture into 1 ½ qt. casserole; sprinkle crumbled bacon on top.

Bake at 350º for 45-60 minutes, covered.

This casserole is excellent baked day before serving. Gives the sauce more time to soak into the beans.

Miscellaneous Recipes

Pizza Alfredo

1 pizza crust (pre-made, bread machine or mix)

6 oz. mozzarella, grated

1/3 C. parmesan, grated

1 T. olive oil

2 tsp. garlic, minced

1 C. ricotta

1 T. basil, fresh, chopped

Pre-heat oven to 425º. Heat the oil, add the garlic and remove from the heat. Set aside and allow to cool. Sprinkle the mozzarella and parmesan on the crust. Bake for 5 minutes. Mix together the ricotta and garlic oil. Spread on the pizza. Bake for an additional 10 minutes (or until starting to brown). Garnish with the fresh basil.

Apple Butter

10 apples, large, peeled and cored

1 ½ C. sugar

1 ½ tsp. cinnamon

1/8 tsp. clove, ground

½ tsp. salt

Cut the apples into medium slices. Place in a heavy saucepan. Stir in the remaining ingredients. Cook for three hours (or until thick and dark) over very low heat, stirring frequently. Refrigerate.

Pear Preserves

3 C. sugar, divided

3 C. water

6 medium-sized ripe pears, peeled, cored (about 2 lbs.)

1 medium lemon (thinly sliced, about ½ cup)

Cut each pear into about 6 pieces. Combine 1 ½ cups of the sugar and all the water in a large kettle or sauce pot. Cook rapidly for 2 minutes. Add pears and boil gently for 15 minutes. Add remaining sugar and lemon, stirring until sugar dissolves. Cook rapidly until pears are transparent (about 25 minutes). Cover and let stand overnight or at least 12 hours in a cool place.

With a slotted spoon, remove pears from cooking liquid (syrup). Pack pears into hot jars, leaving ¼“ head space. Adjust caps on jars. Process 20 minutes in a boiling water bath. Makes about 5 half pints.

Peach Preserves

8 C. peaches, peeled, pitted and sliced (about 4 lbs.)

2 T. fresh lemon juice

3 oz. pkg. of powdered pectin

7 C. sugar

Combine peaches, lemon juice and pectin in a large pot or Dutch oven. Bring to a rolling boil, stirring gently. Add sugar and return to rolling boil. Boil hard for 1 minute, stirring constantly. Remove from heat. Skim any foam. Pour hot into hot jars, leaving ¼“ head space. Adjust caps, and process 10 minutes in boiling water bath. Makes about 6 12 oz. jars.

Fried Rice

3 lg. eggs

½ tsp. salt

½ tsp. ground black pepper

¼ C. vegetable oil, divided

1 C. chopped ham steak (cut into ½“ pieces)

6 C. cooled cooked rice

1 C. frozen peas

1 C. matchstick carrots

1 C. bean sprouts

3 T. soy sauce

¼ C. chopped green onions

In a medium bowl, whisk together eggs, salt and pepper.

Heat a large skillet or wok over medium-high heat. Add 2 T. vegetable oil to pan. Heat for 1 minute, or until oil is hot. Add ham to pan, stirring frequently for 1 minute. Add egg mixture to pan. Cook, stirring frequently, for 2 to 3 minutes, or until eggs are cooked but not dry. Remove egg mixture from pan; set aside. Wipe pan clean.

Add remaining 2 T. vegetable oil to pan. Heat for 1 to 2 minutes, or until oil is hot. Add rice to pan, stirring frequently, for 2 to 3 minutes, or until heated through, breaking up rice clumps as necessary. Add peas and carrots to pan, stirring to combine. Cook for 3 to 4 minutes, or until carrots are crisp-tender. Add soy sauce and green onion, stirring well. Return egg mixture to pan, stirring gently to combine.

Peppermint Hot Chocolate

4 C. milk

1 (11.75 oz.) jar hot-fudge topping

3 T. peppermint-flavored syrup

Garnish: miniature marshmallows, peppermint sticks

In a medium saucepan, combine milk, hot-fudge topping, and peppermint syrup, whisking to combine well. Bring to a simmer over medium-low heat, stirring occasionally. Garnish with marshmallows and peppermint sticks, if desired.

Hot Chocolate-Covered Cherry

2 C. milk

2 C. half and half

½ C. sugar

½ C. unsweetened cocoa powder

½ C. maraschino cherry juice

Garnish: whipped cream, maraschino cherries, grated semisweet chocolate

In a medium saucepan, combine milk and half and half. Bring to a simmer over medium-low heat. Add sugar, stirring until dissolved. Whisk in cocoa. Add cherry juice, stirring to combine. Top with whipped cream, cherries and grated chocolate, if desired.

Orange Hot Chocolate

4 C. milk

1 ½ heavy whipping cream

½ C. sugar

½ C. Dutch-processed cocoa

½ C. orange-flavored liqueur

¼ tsp. orange extract

Garnish: orange spiral

In a medium saucepan, combine milk and cream. Bring to a simmer over medium-low heat. Add sugar, stirring until dissolved. Whisk in cocoa. Add orange-flavored liqueur and orange extract, stirring to combine. Garnish with orange spiral, if desired.

Almond Hot Chocolate

6 C. milk

1 C. ground sweetened chocolate

2 T. unsweetened cocoa powder

6 T. almond-flavored liqueur

¼ C. almond-flavored syrup

Garnish: sliced almonds

In a medium saucepan, bring milk to a simmer over medium low heat. Whisk in ground sweetened chocolate and cocoa. Add almond liqueur and almond syrup, stirring to combine. Garnish with sliced almonds, if desired.

Mocha Hot Chocolate

3 C. milk

3 C. half and half

8 (1.25 oz.) envelopes dark chocolate hot cocoa mix

¼ C. espresso powder

¼ C. coffee-flavored liqueur

Garnish: whipped cream, espresso powder, chocolate-covered coffee beans

In a medium saucepan, combine milk and half and half. Bring to a simmer over medium-low heat. Whisk in cocoa mix and espresso powder. Add coffee liqueur, stirring to combine. Garnish, if desired.
